Beetroot Bliss Bites

These nutrient dense treats are a real eye catcher with their deep crimson colour and they offer something a bit different than your average homemade treat.  We shared them last weekend at the Ovacare patient day in Cork as well as the previous week at the Marilyn Glenville talk in Cork.  If you didn’t get a chance to try them in person,  give this recipe a go. It is simple, healthy and won’t disappoint!


The benefits of beetroot are tremendous. Beetroot is full of antioxidants and phytonutrients helping lower inflammation, blood pressure and boost stamina.  Research is also showing great results in the use of beetroot to ward off tumour formation in cancer when administered to animal models.  It is also a very beneficial source of dietary fibre and supports detoxification which is a vital piece to optimal health.

 

The roasted buckwheat in this recipe is alkalizing and is a great source of rutin which is a strong antioxidant and anti-inflammatory.  It is being studied for its pain relieving effects in arthritis.  It also helps strengthens blood vessels, reduce the formation of blood clots and lower LDL cholesterol.

Coconut is one of the best sources of Medium Chain Fatty Acids (MCFAs).  This unique and healthy fat source is the perfect energy boost, and can enhance cognitive and physical performance.  Coconut is also anti-viral, anti-fungal, anti-parasitic and anti-microbial, supporting immune function and helping us stave off infection. It improves insulin secretion, kidney function, heart health and helps lower LDL cholesterol. Coconut also promotes healthy weight loss, younger looking skin and protects us from sunburn.

 

These tasty bites are sweetened with date puree.  Dates are known for their excellent source of fibre which is supportive of regular bowel movements, again a vital part of detoxification and optimal health.  The combination of excellent fibre and natural sugars allows for an energy lift without the drip that often comes with sweet treats.  Dates are also an excellent source of Iron, Magnesium, Potassium, Manganese and Selenium.
