Foraging for The FoodRemedy

This week The FoodRemedy is hosting a ‘Wild Foods’ creative cookery class in Cork.

 

Spring in Ireland is the beginning of a year round plethora of amazing wild foods and medicine.  This time of year all the goodness is in the greens and young shoots in our forests and hedgerows as well as amazing abundance on the seashore.

 

The Class will be featuring delicious and nourishing dishes from wild crafted ingredients and we will share tips on identifying and gathering your own wild foods so you can get creative in your kitchen.
Yesterday was May Bank Holiday Monday, and the sun is splitting the stones in Cork.  What a perfect day to wander through the woods and along the shore to see what abundance spring has sprung.
I grabbed my two trusty assistants; Luca, my 2-year-old son and Thuja, my beautiful collie, to help me forage fresh foods for The FoodRemedy. I LOVE MY JOB!

 

Check out some of these beautiful plants! Dock leaves, Cleavers, Dandelion flowers and leaves, Plantain leaves and tips, Wild leek flowers and leaves, Sea Spinach, and so much more!
